Ube flavor was spot on. Cheesecake about 80% perfectly baked. Towards outside crust just a bit overcooked. Otherwise, silky smooth, great sweetness and flavor.

Slight pretzel flavor so not likely from NaOH. Very crumbly, and course pretzel salt just hydrates & absorbs. Not sure if GF pretzels can be made to match G versions.

Easily the most Gluten like GF bread. Flavor wasn’t especially amazing but texture was pretty close to spot on. It was chewy & airy. A perfect compliment to their main dishes.

Needed salt to bring out subtle flavors. Mushrooms excellent, GF pasta unrecognizable from otherwise. Pancetta was fairly thick cut, chewy, hard, & got stuck badly between teeth.

Sauce was fairly average meat sauce. Gnocchi were slightly hard w/ a grainy texture. No chewiness to them at all, almost like plain old cubed potatoes but they weren’t.

Smoked Salmon was perfect, potato latke an interesting but ok choice for a base, but for me, hollandaise was lacking - needed more lemon, more tart to offset rich savory flavors.
